Amazing Banana Yeast Pancakes

An incredibly magical recipe for banana pancakes with chocolate and nuts. This recipe has notes of Arabic cuisine, but at the same time it has taken root well in both Europe and America. The pancakes are very fluffy, tender and delicious!

Total time: 40 minutes | Cooking time: 10 minutes | Yield: 6 servings
INGREDIENTS
1. Banana - 3 pcs
2. Egg - 2 pcs
3. Sugar - 3 tbsp
4. Salt - 1/4 tsp
5. Milk - 200 ml
6. Yeast - 1 tbsp
7. Warm water - 200 ml
8. Flour - 260 g
9. Vegetable oil - 50 ml
10. Chocolate - to taste
11. Nuts - to taste
Step By Step Cooking Process
STEP 1
Peel 2 ripe bananas. Cut into slices, then mash until pureed, you can use a blender or, as I do, with a regular fork.
STEP 2
Add the banana mixture to a deep bowl, then beat in the eggs, sugar, salt and yeast. Pour in the milk and whisk very well.
STEP 3
Pour in water, add flour in portions and whisk. Cover the dough and let it stand for 30 minutes. The dough should rise during this time.
STEP 4
To a hot frying pan, add vegetable oil, reduce heat to medium and using a small bowl or ladle, add batter and cook European style pancakes (allowing batters to fill the entire pan) until golden brown on each side.
STEP 5
When the pancakes are ready, slice the remaining banana, chop the nuts and prepare the chocolate. Grease each pancake with chocolate, then lay out the banana circles in a row in the middle, roll them up and divide into portions.
STEP 6
Place the pancake rolls on a plate and decorate with chocolate and nuts to taste.
